Zucchini Ki Sabji
Zucchini prepared with selected spices

Ingredients
500 Grams | Zucchini |
2 Teaspoons | Garlic Paste |
2 Teaspoons | Ginger Paste |
1 Teaspoon | Green Chilli Paste |
1 Medium | Finely Chopped Onion |
1 Medium | Diced Fresh Tomato or |
2 Tablespoons | Tomato Paste |
0.5 Cup | Cooking Oil |
Dry Spices
1 Teaspoon | Cumin Seeds/ Zeera |
2 Teaspoons | Garam Masala |
1 Teaspoon | Turmeric Powder (Haldi) |
2 Teaspoons | Coriander Powder |
| Salt to taste |
Garnish
2 Tablespoons | Finely Chopped Coriander leaves |
Method
Wash, and cut Zucchini in small pieces.
In a Frying Pan heat oil and add cumin seeds .When they starts crackling add onions and fry them till they turns golden brown.
Now add garlic , ginger and green chili paste and cook it for 1 minute.
Then add all the dry spices one by one followed by 1 table spoon of water and cook for another 1 minute.
Now add fresh tomatoes or tomato paste. Cook it till the masala leaves the oil. Add Zucchini to the masala and cook it up to 5 minutes at high flame.
Then turn the flame to medium and cook sabji for 10-15 minutes. When it is done put it in a serving bowl and garnish it with coriander leaves, and serve it with chapatti or pranthas.
