Upma

Thick porridge snack made from Semolina

Serving 2-4 persons

Preparation Time: 5 minutes

Cooking Time: 15 minutes

 

Ingredients

1 CupRava/Soozi/Semolina
1 MediumFinely Chopped Onion
1 CupMixed Vegetables (Green Peas, Carrots, Green Beans)
2 TablespoonLemon Juice
6 Curry Leaves
2 TablespoonCooking Oil

Dry Spices

1 TeaspoonMustard Seeds
1 Pinch of Hing
1 TeaspoonSesame Seeds
1 TeaspoonUrad Dal without husk (White Dal)
1 TeaspoonBengal Gram
1 TeaspoonSugar
Salt To taste

For Garnishing

2 TablespoonFinely Chopped Green Coriander leaves

 

Method

  1. In a frying pan heat oil add hing and mustard seeds& Sesame seeds to it. Now add Urad dal and chana dal fry it for one minute at medium flame.

  2. Then add onions & Curry leaves to it. Fry onions till they turn golden then add salt , sugar, lemon juice and mix it well.

  3. Now add vegetables & half cup of water to it and cook them at medium high flame for 5 minutes.

  4. Now add 1 cup of semolina and 1 cup of water,& cook it for other 2-3 minutes while stirring it all the time. The semolina will absorb the water and upma is ready.

  5. Remove it from the flame garnish it with green coriander and serve it with chutney and Chai.

You can also add peanuts, Cashew nuts and raisins to it. You can add them Just before the onions and fry them for 1-2 minutes at medium flame then adding the onions. Some people also like tomatoes. If you like tomatoes add them when other vegetables are added.
