Sliced Egg Plant in a spicy gravy

Ingredients1 Large | Egg Plant | 4 Tablespoons | Corn Flour | 1 Tablespoon | Corn Flour | 1 Teaspoon | Coriander Powder | 1 Teaspoon | Garam Masala | 1 Gram | Red Chili Powder | 1 Tablespoon | Ginger Paste | 1 Tablespoons | Finely Chopped Green Chillies | 1 Tablespoon | Mango Powder or Pomegranate Powder | | Salt To Taste | 3 Cups | Cooking Oil |

For Garnishing2 Tablespoons | Finely Chopped Coriander Powder |
MethodIn a frying pan heat oil for frying. In an large bowl add corn flour and gram flour ginger, green chilli, garam masala, coriander powder, anardana powder coriander leaves, salt and mix it with water to make batter. It should not be too runny or too thick. Cut egg plants in circular shape dip them in the batter and fry them in the oil. Fry them in batches but do not over crowd the pan. Fry all of them and drain them on paper towel. In a large skillet heat oil and add cumin to it when it turns brown add onions to it . Fry them till they turn golden brown, Add Ginger, garlic and green chilli to it and fry it for another 1 minute then add coriander powder, garam masala, turmeric powder, and salt and fry it for another one minute. Add Tomato paste to it and cook it till masala separates the oil. Then add 1 cup of water and cook it at medium high flame for 2 minutes and then add fried eggplants to it. Turn n toss gently till all the egg plants get socked in gravy sprinkle water if required cook it for another 2 minutes and remove it from the flame. Garnish it with coriander leaves and serve it hot with puri, parantha or chapati.
