Fried Colocasia Roots with spices

Ingredients1 Pound | Colocasia Roots | 1 Large | Finely Chopped Onion | 2 Tablespoon | Lemon Juice | 1 Tablespoon | Ginger Paste | 1 Tablespoon | Finely Chopped Green Chillies | 1 Teaspoon | Garlic Paste | 1 Cup | Cooking Oil |
Dry Spices1 Teaspoon | Cumin Seeds | 1 Teaspoon | Mustard Seeds | 1 Teaspoon | Turmeric Powder | 1 Tablespoon | Coriander Powder | 1.5 Teaspoon | Garam Masala | 1 Teaspoon | Red Chilli Powder | | Salt To Taste |
For Garnishing2 Tablespoons | Finely Chopped Coriander leaves |
MethodWash and peel Colocasia Roots. Wipe them off if there is any residue of the skin sticking to the roots. Now cut them inti long thin slices. In a shallow pan take half cup of oil and heat it .Now fry roots in batches. They should be light golden not brown when fried. Drain them on paper towel and keep them aside. In an frying pan heat other half cup and add cumin and mustard seeds to it. When it starts cracking add onions to it. Cook onions till they turn golden brown. Then add ginger, garlic and green chillies to it and fry them for 2 minutes. Now add turmeric powder, red chilli powder, salt, coriander powder, garam masala and cook it for 1 minute. Now add half cup of water to masala and cook it at high flame. Add roots and 2 tablespoon of lemon juice to it and cook it at medium high flame for 5 minutes. Keep stirring in between so it does not catch the bottom. Now lower the flame and cook it for another 8-10. Garnish it with green coriander leaves and serve it hot with puri, parantha, or chapatti
