Allo Gobhi Masala
Tasty mix of Potatoes, Cauliflower and spices

Ingredients
3 Cups | Cauliflower (Gobhi) Florets |
2 Cups | Diced potatoes |
2 Teaspoon | Ginger Paste |
3 | Chopped Green Chillies |
1 Large | Finely Diced Tomato (optional) |
2 Tablespoon | Tomato Paste |
0.5 Cup | Cooking oil |
Dry Spices
1 Teaspoon | Mustard Seeds (Rai) |
1 Teaspoon | Cumin Seeds (Zeera) |
7 | Curry Leaves (optional) |
1 Teaspoon | Garam Masala |
1 Teaspoon | Turmeric Powder |
1 Teaspoons | Coriander Powder |
2 Pinches | Asafetida (Hing) |
| Salt To Taste |
For Garnishing
2 Tablespoon | Finely Chopped Coriander Leaves |
Method
In a large skillet heat the oil. Add mustard seeds and cumin seeds when they start crackling. Add curry leaves and cook in for 1 minute.
Now add ginger and chopped green chilies and cook it for another 1 minute.
Now add all the dry masalas one by one and cook for 1 minute and then add tomato paste. Cook masala for 2 minutes at low flame. Then add 1 cup of water.
Now add Allo (potatoes) and Ghobi (cauliflower) and cook them for 10 minutes at high then turn down to medium flame and keep stirring in between.
Check the vegetables if they are done by trying to mash a potato when it is half done add chopped tomatoes and cook it till its done and keep checking in between so it does catch the bottom if it starts to catch bottom add a little warm water.
When its done garnish it with coriander leaves and serve it with puri, prantha or chapatti.
